We recently sat down with Richard Erickson, co-founder and Chef of Bistro-To-Go and Blue Mountain Bistro. He told us about his food journey, how he came to call the Hudson Valley home, and the success behind one of the areas busiest, award-winning food establishments known for their homemade comfort food, delicious daily specials and take-out oven-ready meals. He even shared a recipe for his delicious Easy-Stuffed Chicken Breast. Blue Mountain Bistro, another one of his gastro-babies, is also a local favorite for catering special events and galas.
