Chef Tony Moustakas Shares his Spicy Braised Korean Pork Belly Recipe

Did someone say Pork Belly? Yes, please. Today we are thrilled to share this recipe by the one and only Executive Chef of City Winery HV, Tony Moustakas.

“This new dish  is a favorite of our Executive Chef Moustakas. Our tender Korean Pork Belly is brushed with a spicy barbecue glaze and served with apple kimchi slaw. A perfect mix of heat and sweet.”

Spicy Braised Korean Pork Belly With Apple Kimchi Slaw Recipe
Serves four
INGREDIENTS

Korean BBQ Sauce
8 oz Gochujang hot pepper paste
8 oz Light Brown sugar
1 oz. Rice vinegar
1 oz. Apple cider vinegar
1 tbsp. Fresh ginger grated
1 tsp. Chopped garlic
1 oz. Sesame oil
4 oz Sweet chili sauce

Apple Kimchi Slaw
1 ginger snap apple -Julienne
1 cup prepared Kimchi- chopped
½ cup cilantro – chopped

Spice Rub Marinade
3 lb. Boneless Pork Belly
1 cup Soy Sauce
4 tbsp. Kosher salt
4 tbsp. Ground allspice
4 tbsp. Ground black pepper

Pork Belly Braise
1 tbsp. Olive oil, plus more for sauteing pork
1 each Medium yellow onion (chopped)
1 each Large carrot (peeled and chopped)
3 each rib of celery (chopped)
3 each Garlic cloves
2 cups Dry white wine

1 each Cinnamon stick (2 inches)
1 each Star anise pod (whole)
2 each Juniper berries (whole)
1 each Clove (whole)
1 qt. Chicken stock

DIRECTIONS

Step 1: Sauté all mirepoix & garlic in oil until tender.

Step 2: Deglaze with wine, add stock and aromatics.

Step 3: Place the brazing mixture on a pan and then a roasting plack with pork belly.

Step 4: Cover with foil and roast at 325 degrees for 3.5 hours.

Step 5: Meanwhile, mix together the slaw ingredients and let marinade in the cooler while roasting the pork belly. Stir before serving.

Step 6: Check that pork is fork-tender but still firm. Cool and portion in 8 oz. slices (¼” slices).

Step 7: Heat Chargrill, place pork belly and brush with BBQ Sauce on both sides until char starts and it is heated through. Serve with apple kimchi slaw.
